Eggs Benedict

This morning I again took advantage of some of my lovely finds at the farmer’s market the other day! I made eggs benedict, for the first time ever! I used the delicious eggs we got at the farmer’s market. I didn’t have any ham, so I used sliced heirloom tomatoes (from the farmer’s market) instead. I poached the eggs, put the eggs and tomato slices on top of bagel halves (instead of English muffins), and topped with a homemade hollandaise sauce. I reduced the recipe to about 2/3 (using two egg yolks instead of 3), and I substituted sour cream for part of the butter. It was great! It was such a filling breakfast, however– I was only able to eat one egg!
