Shepherd’s Pie

Dinner tonight was shepherd’s pie, rice, and salad. I was really hoping that Emmett would eat a full plateful, to get lots of iron and protein from the beef, but he was so tired by dinnertime that he only ate about half a plate. But, we’ve got plenty of leftovers for lunch tomorrow!

The shepherd’s pie had beef, onions, mushrooms, peas & pearl onions, carrots, Swiss chard, sage, and garlic-sage mashed potatoes. For the broth I used a mixture of chicken broth and reserved water from boiling the Swiss chard and carrots (mixed with some flour to thicken it, and about two tablespoons of sour cream for some extra flavor). It was good!
